Little Luxuries — Soft Scrambled Eggs

Small luxuries are often my favorite luxuries. The simple, small things that accumulate over time that add up to a rich, beautiful life.

One of those things for me is a simple, satisfying breakfast. It fills me up so I can take on the day fully fueled, it’s nutrient dense and good for me, and it’s luxurious and lush.

So — today’s little luxury is a very informal recipe for my buttery, soft-scrambled eggs.

To start:

  • Grab a knob of salted butter and melt it in a small frying pan

  • While the butter melts, toast a slice of bread (this morning I used a very nutty, grainy sourdough that I picked up at a local bakery).

  • Crack two eggs into the frying pan, and whisk up using a wooden spoon. Stir constantly until it thickens to almost a pudding-like consistency.

  • Put the toast on a plate, butter it (if you’re feeling especially decadent), and pour the soft scrambled eggs over the toast.

  • Top with maldon sea salt, freshly cracked black pepper, and fresh herbs or greens. My favorites are chives and pea shoots. A little goat cheese would be a lovely addition, too!

  • Enjoy with a fresh cup of coffee, tea, or if it’s not a work day (or if you’re having this later in the day), a cheeky zip of white wine!
