Little Luxuries — Soft Scrambled Eggs
Small luxuries are often my favorite luxuries. The simple, small things that accumulate over time that add up to a rich, beautiful life.
One of those things for me is a simple, satisfying breakfast. It fills me up so I can take on the day fully fueled, it’s nutrient dense and good for me, and it’s luxurious and lush.
So — today’s little luxury is a very informal recipe for my buttery, soft-scrambled eggs.
To start:
Grab a knob of salted butter and melt it in a small frying pan
While the butter melts, toast a slice of bread (this morning I used a very nutty, grainy sourdough that I picked up at a local bakery).
Crack two eggs into the frying pan, and whisk up using a wooden spoon. Stir constantly until it thickens to almost a pudding-like consistency.
Put the toast on a plate, butter it (if you’re feeling especially decadent), and pour the soft scrambled eggs over the toast.
Top with maldon sea salt, freshly cracked black pepper, and fresh herbs or greens. My favorites are chives and pea shoots. A little goat cheese would be a lovely addition, too!
Enjoy with a fresh cup of coffee, tea, or if it’s not a work day (or if you’re having this later in the day), a cheeky zip of white wine!
